Alyce, with her husband Doug Wolbert, has owned and operated Sweet Home Farm in Elberta, Alabama since 1984. They Produce 16 varieties of raw cows milk cheese. At Terra Madre she represented the United States as the delegate to represent all US Slow Foods. |

Mateo is the co-owner, cheesemaker, mastermind and front man for Jasper Hill Farm in Greensboro, Vermont. He is very involved in defining models of sustainability for small scale, artisan, farmstead cheese making. He is also focused on improving the craft and business of cheese affinage. |
