Hillis Peak CheeseTrade Lake Cedar

Hillis Peak is a washed curd cheese from Pholia Farms in Rogue River, Oregon.  It is made from Nigerian Dwarf Goat milk.  It is aged from 4-6 months and has a natural rind that is rubbed with oil and paprika during aging.  The paste is creamy and slightly sharp with herbal overtones.

Hillis Peak

Trade Lake Cedar, from LoveTree Farmstead in Grantsburg Wisconsin. Is a natural rind sheep milk cheese aged in open air caves on cedar boughs.  It’s definitely “aromatic” with fruity and woodsy undertones.
